Eating quinoa dates back thousands of years and we can see why, it really is a “superfood.”

This Andean plant was a staple food source for the people of ancient Peru and Bolivia, feeding pre-Colombian civilizations for thousands of years. Almost all of the quinoa eaten today is organically grown in regions of South America where pesticides and chemicals are not used, and its available in most grocery and wholefood stores.

High in fibre and proteins, and rich in amino acids, quinoa is a great substitute for bleached white rice, or genetically modified corn. Aside from that, eating this superfood as part of a healthy, balanced diet is so easy, and you’ll love the results. Below are a few awesome ways of using quinoa that’ll make your mealtimes both exciting and nourishing, whilst packing a tasty punch.

Quinoa Risotto

  • Add 300ml of water to a saucepan and bring it to a gentle boil
  • Add quinoa so the water is just covering the grains and place sliced onions and garlic into the pan
  • Slice mushrooms and add to the risotto, along with a small amount of organic veg stock mixed with 100ml of water
  • Leave to simmer with the lid on for around 15 minutes
  • Remove the lid after 15 minutes and stir in a good dash of softened organic goats cheese
  • Allow the cheese to melt fully and add a dash of extra virgin olive oil, stirring thoroughly
  • Serve and garnish with sliced spring onions and Black Pepper

Quinoa Summer Salad

  • Add 300ml of water to a saucepan and bring to a rolling boil
  • Add quinoa so the water is just covering the grains
  • Simmer with the lid on for 15-20 minutes until the grains have softened
  • Remove from the heat and allow the grains to cool
  • Add 1/2 tsp of paprika and a pinch of chilli powder
  • Use rocket (or any leaf you have available) to compose a salad with pine nuts, avocado, tomato, spring onion and a squeeze of lemon
  • Mix the quinoa into the salad once it has cooled down sufficiently
  • Drizzle with olive oil and serve

Black Bean and Quinoa Burgers

  • Simmer the desired amount of Quinoa until the grains are soft enough to eat
  • One cool, add drained black beans to the quinoa and season with salt and black pepper
  • Finely dice 1 red onion into the mix along with some chopped coriander and a squeeze of lemon
  • Add a clove of finely chopped garlic and a splash of tahini oil
  • Add 1 free range egg yolk
  • Thoroughly mix the ingredients making sure you crush the beans as you stir (best to use your hands)
  • Shape the mix into patties and shallow fry in olive oil on both sides until crisp
  • Can be eaten in a bun, tortilla or on its own with salad and plenty of pickles
