Tomato Soup Recipe (Restaurant Style, Made in a Pressure Cooker)

45 minVegetarian128 kcalUpdated 23 Oct 2026

This tomato soup recipe gives you the smooth, deep red bowl you get in an Indian restaurant, made at home with fresh tomatoes and a pressure cooker. Everything cooks together in one go, gets blended, and is then pushed through a sieve so the soup is silky without any cream.

Two small things make it taste like the restaurant version. A piece of carrot and a small slice of beetroot add natural sweetness and that bright colour, and a short simmer after straining lets the soup thicken and the raw tomato edge cook off. You need only one tablespoon of butter for four bowls, and you can swap even that for a teaspoon of oil. Crisp croutons made from leftover bread finish it.

Ingredients

Makes 4 bowls (about 1 litre)

For the soup

  • 6 ripe red tomatoesmedium, roughly chopped
  • 1 small carrotpeeled and sliced
  • 1 small onionroughly chopped
  • 1 thin slice of beetrootabout 1 inch, for colour (optional)
  • 4 cloves garlicpeeled
  • ½ inch gingersliced
  • 1 tej patta (bay leaf)
  • 6 whole black peppercorns
  • 2½ cups water
  • 1 tbsp butteror 1 tsp oil
  • 1½ tsp sugaradjust to the sourness of the tomatoes
  • 1 tsp corn flourmixed in 2 tbsp water (optional)
  • ¼ tsp black pepper powderfreshly crushed
  • saltto taste
  • 1 tbsp hara dhania (coriander leaves)finely chopped

For the croutons

  • 2 slices whole wheat breadcut into small cubes
  • 1 tsp butter or oil

You will need

  • Pressure cooker (3 litre)
  • Mixer or hand blender
  • Fine sieve
  • Saucepan
  • Tawa or small pan for croutons

Method

  1. Load the cooker

Put the tomatoes, carrot, onion, beetroot, garlic, ginger, bay leaf and peppercorns into the pressure cooker. Add 2.5 cups of water. The water should come just below the top of the vegetables.

  2. Pressure cook

Close the lid and cook on medium flame for 2 whistles, then switch off. Let the pressure drop on its own. The carrot should crush easily between two fingers.

  3. Cool a little

Open the cooker and fish out the bay leaf. Let the mixture cool for about 10 minutes, because blending very hot liquid in a closed jar can push the lid off.

  4. Blend

Blend in two batches until completely smooth, with the jar only half full each time. Keep the cooking water; it goes in with the pulp.

  5. Strain

Pour the purée through a fine sieve set over a saucepan. Press and stir with a ladle until only seeds and dry skin remain in the sieve, then scrape the underside of the sieve into the pan too.

  6. Simmer and season

Bring the soup to a gentle boil, add the butter, sugar, salt and pepper powder, and simmer for 5 to 7 minutes, stirring now and then. It should lose its sharp raw tomato smell and coat the back of a spoon lightly.

  7. Adjust the thickness

If it is still thin, stir in the corn flour slurry and simmer for 1 more minute until glossy. If it is too thick, add a few spoons of hot water.

  8. Make the croutons

Heat 1 tsp butter or oil on a tawa, add the bread cubes and toss on low flame for 4 to 5 minutes until golden and crisp on all sides. They firm up further as they cool.

  9. Serve

Pour into bowls, sprinkle coriander and a pinch of crushed pepper, and add the croutons just before eating so they stay crunchy.

Tips that make the difference

  • Use deep red, soft tomatoes. Pale, firm ones give a sourer, orange soup that sugar cannot fully fix.
  • Taste before adding all the sugar. Sweet country tomatoes may need only half a teaspoon.
  • Do not skip straining. It is what gives the smooth restaurant feel without cream.
  • For a 5 litre cooker, keep the same 2 whistles but make sure there is enough liquid to build steam.
  • Add croutons at the table, never into the pot.

Storing: Keeps 2 days in a covered container in the fridge, or 1 month frozen. Reheat on low flame with a splash of water. Store croutons separately in an airtight jar for up to 4 days.

Why this restaurant style tomato soup recipe works

Restaurant kitchens make tomato soup in big batches, so they cook everything soft, purée it and strain it. Doing the same in a pressure cooker takes about 12 minutes and needs no constant stirring. The steam cooks the garlic and onion fully, so there is no raw bite, and it softens tomato skins enough that the sieve catches them easily.

The carrot and beetroot do more work than their size suggests. Carrot gives body and sweetness, so you need less sugar. A thin slice of beetroot deepens the colour to that bright red you expect, especially when your tomatoes are a bit orange. You will not taste it.

Simple and easy tomato soup with fresh tomatoes: the key steps

This simple tomato soup recipe uses only fresh tomatoes; no packet, no ready purée. It stays easy if you get three moments right.

  1. Whistles: two whistles on medium flame are enough. More cooking turns the flavour flat and slightly bitter.
  2. Straining: press firmly. Most of the flavour sits close to the skin, so scrape the pulp off the sieve and into the pan.
  3. The final simmer: this is where the soup turns from tomato juice into soup. Five minutes after it comes to a boil, it looks glossy and smells sweet rather than sharp.

For a Jain version, leave out every root vegetable: onion, garlic, ginger, carrot and beetroot. Cook the tomatoes with half a red capsicum or a small wedge of red pumpkin (lal kaddu) for body and sweetness, and add a tiny pinch of hing (asafoetida) to the butter during the final simmer.

Croutons and bread crumbs for tomato soup

Croutons are the classic topping. Any bread works: whole wheat, white or a slightly stale pav. Stale bread actually crisps faster because it holds less moisture. Cut small cubes, about half an inch, so each spoonful gets a few.

  • Tawa method: 1 tsp butter or oil, low flame, 4 to 5 minutes, tossing often.
  • Oven or air fryer: toss the cubes with half a teaspoon of oil and bake at 180°C for 6 to 8 minutes, shaking once.
  • Garlic croutons: mix a pinch of garlic powder or one grated clove into the butter before adding the bread.
  • Bread crumbs topping: blitz a toasted slice in the mixer into coarse crumbs and toast them dry on the tawa with a pinch of dried herbs. Sprinkle over the soup for crunch with less bread.

If you own an air fryer, the air fryer recipes page has more ideas for crisp sides with very little oil.

Variations: cream of tomato, roasted, carrot and palak

Cream of tomato soup recipe

Make the soup as written, then off the heat stir in 2 tbsp fresh cream or 3 tbsp warm full cream milk for four bowls. Adding it off the heat stops it from splitting in the acidic soup. This is richer, so treat it as a weekend version. Our everyday tomato soup recipe without cream relies on straining and simmering for its smooth feel.

Roasted tomato soup recipe

Halve the tomatoes and roast them with the onion and garlic at 200°C for 25 minutes, or char them whole over a gas flame until the skins blister. Then cook with water and the carrot for 1 whistle only, and blend and strain as usual. The flavour is smoky and sweeter.

Carrot and tomato soup recipe

Use 4 tomatoes and 2 medium carrots. It comes out orange red, naturally sweet, and children usually like it. You may not need any sugar.

Palak tomato soup

Add a handful of washed palak (spinach) leaves to the cooker for the last minute: open after the whistles, drop in the leaves, cover and leave for 2 minutes, then blend. The colour deepens to a brownish red and the soup gets a mild, earthy green note.

Tomato soup in Hindi, Marathi and Tamil kitchens

In Hindi it is called tamatar ka soup, and many readers search for tomato soup ki recipe or tomato soup banane ki recipe, which is exactly this method: tamatar, gajar (carrot), pyaz (onion), lehsun (garlic) and adrak (ginger) in the cooker, blended and strained. In Marathi homes the same soup often gets a few curry leaves in the butter, while in Tamil homes a close cousin is thakkali rasam, which is thinner and tempered with mustard seeds. The method on this page stays the same in any language: cook, blend, strain, simmer.

Is homemade tomato soup healthy?

By our estimate, a bowl of this homemade soup with croutons has about 128 kcal, 4 g protein and 5 g of fat, most of the fat from the butter. That makes it much lighter than a cream of tomato soup made with half a cup of cream. The vegetables bring some fibre, and straining removes part of it, so keep the scraped pulp in.

A soup alone is not a meal. Pair it with something that has protein, such as a besan chilla or a paneer sandwich, or see the healthy dinner recipes page for full light dinners. For a chunkier bowl with more vegetables, try the clear vegetable soup.

Questions cooks ask

Can I make tomato soup without a pressure cooker?

Yes. Simmer everything covered in a pot for 20 to 25 minutes until the carrot is soft, then blend and strain as usual. Use an extra half cup of water because more evaporates.

Can I use tomato puree instead of fresh tomatoes?

You can, but the taste is flatter and more acidic. If you must, use 1 cup puree with 2 cups water and the same vegetables, and simmer longer. Fresh ripe tomatoes give the best result.

Why does my tomato soup taste raw?

It was not simmered long enough after straining. Give it 5 to 7 minutes at a gentle boil; the smell changes from sharp to sweet when it is ready.

Can I skip butter completely?

Yes. Use 1 tsp oil, or no fat at all and just simmer with salt, sugar and pepper. The soup is slightly less rounded but still good, especially with croutons toasted dry.

How do I make tomato soup for kids?

Use the carrot and tomato variation, skip the pepper powder, and keep the croutons small. Serve it warm, not hot, with a slice of toast for dipping.

Which tomatoes are best for soup?

Soft, fully ripe, deep red tomatoes. Desi tomatoes are tangier and juicier; hybrid ones are firmer and milder. A mix of both gives good balance.
